When I went vegan, I thought there were no original options for me and I'd be eating plants and pastas and starches forever. Fear not, for it is holiday season and vegan treats exist. Vegan treats are not unicorns. Oh, wait. Unicorns are real according to my shirt.

Anyway, here's some delicious chocochip delicious deliciousness.
Vegan Chocolate Chip Cookies
Makes about 24 cookies
What you'll need:
- 2/3rds cup vegetable shortening
- 1 cup brown sugar
- 1/2 cup organic white sugar
- 2 and 1/4th cups oat flour
- 1 teaspoon salt
- 1 teaspoon xanthan gum
- 1 tablespoon coconut oil
- 1/3rd cup water
- 1and1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 tablespoon vanilla extract
- 10 ounces semisweet chocolate chips (make sure they don't have milk fat in them, tricky bastards)
Instructions:
- Preheat oven to 375F or 190C
- Cream shortening, coconut oil, brown and white sugars in mixing bowl
- Add vanilla and water and mix until combined
- In another bowl, combine the dry ingredients
- Add to shortening mixture until smooth, 1/4 cup at a time
- Add chips on low speed
- Place small scoops onto a nonstick baking sheet
- Bake for 10 minutes, cool and enjoy!
