If I could eat one thing for the rest of my life, it would be smoothie bowls. Or nice cream. Or rice and beans. Or mangos. Good thing this combines one of the many.
First thing you need to know about this is that it's really easy. As with many other vegan dishes, it's beauty is in it's simplicity and versatility. It could be breakfast, it could be dessert. It could be anything you want it to be really. Today, I chose it to be both. Let's get on with it.
Mango Pineapple Smoothie Bowl
Serves: technically 2 but... I eat both the servings. For the love of fruit.
What you'll need:
- 1.5 cups frozen mango
- 1 cup frozen pineapple
- 12 ounces fresh squeezed orange juice
- 1 tbsp chia seeds (optional)
- 1/4 cup pomegranate
- 1 tbsp toasted coconut flakes
- (toppings are optional, but delicious)
- 1 blender
Instructions:
- Plop the mango, pineapple, chia and orange juice into your blender and blend until smooth, like sorbet. It'll take a minute. You might need to use the tamper tool to stir it around a bit while processing.
- Plate (or bowl) your masterpiece, place toppings on however you like
- Tag me in your Instagram pictures
Easy right? It takes about 1 minute and it's SUPER nutritious and delicious.
Mangos are rich in vitamin C, B, A, and magnesium.
Pineapples are rich in iron and calcium.
Chia is the best. Hail chia.
